Organic Heirloom Cacao

Organic heirloom cacao refers to cacao beans from older, traditional varieties that are grown using organic farming methods. These beans are the source of cocoa solids and cocoa butter, which are the primary components of chocolate. After harvesting and fermentation, the beans are roasted, ground, and processed to create cocoa liquor, the base for chocolate products.

Cacao is the fundamental ingredient in chocolate, providing its characteristic flavor and color. It is used in a wide range of chocolate confections, baked goods, and beverages. Manufacturers use it for its rich, complex taste and its ability to create smooth textures in products.

Cacao is generally recognized as safe (GRAS) by the FDA for use in food. It contains flavanols, which are plant compounds that have been studied for potential antioxidant effects. JECFA has evaluated cacao products, but no specific ADI is set for cacao itself. It is not considered a major allergen.
