Chocolate Swirl: Corn Syrup

Corn syrup is a liquid sweetener made from corn starch. The starch is broken down into simpler sugars, primarily glucose, through a process called hydrolysis. It is a common ingredient in many processed foods due to its sweetness and ability to prevent sugar crystallization.

Manufacturers use corn syrup as a sweetener and to improve the texture and shelf life of foods. It adds sweetness, moisture, and a smooth consistency, and helps prevent the formation of ice crystals in frozen desserts. It is frequently found in baked goods, candies, jams, and ice cream.

Corn syrup is generally recognized as safe (GRAS) by the FDA for use in food. It is a source of calories and carbohydrates, and like other sugars, excessive consumption can contribute to health issues. JECFA and EFSA have evaluated corn syrup and its components. The 2025–2030 Dietary Guidelines for Americans recommend no amount of added sugars, and at most 10 grams of added sugars per meal.
