Cucumber Spears

Cucumbers are elongated fruits, typically green and crunchy, belonging to the gourd family. They are commonly pickled in a brine solution, which often includes vinegar, salt, and spices, to preserve them and create a distinct tangy flavor. This pickling process transforms fresh cucumbers into a shelf-stable condiment.

Cucumber spears are primarily used as a condiment and flavoring agent in a variety of foods. Their briny, acidic taste adds zest to sandwiches, burgers, and salads. They are also a key component in relish and can be served as a side dish or appetizer.

Cucumber spears, as a pickled vegetable, are generally recognized as safe (GRAS) by the FDA for consumption. The primary health considerations relate to sodium content, which can be high due to the brining process. Excessive sodium intake is linked to increased blood pressure, according to the FDA's Daily Value of 2,300 mg. JECFA and EFSA have evaluated various food additives used in pickling brines, but cucumber itself is not typically subject to specific ADI evaluations.
