Dutch process cocoa is cocoa powder that has been treated with an alkali solution to neutralize its acidity. This process darkens the color and mellows the flavor of the cocoa, making it less bitter. It is derived from cocoa beans, the seeds of the cacao tree.

Manufacturers use Dutch process cocoa to achieve a darker color and smoother, richer chocolate flavor in baked goods. Its lower acidity also affects how it reacts with leavening agents like baking soda, which is why recipes often specify either natural or Dutch process cocoa. It is commonly found in cookies, brownies, cakes, and other chocolate-flavored desserts.

Dutch process cocoa is generally recognized as safe (GRAS) by the FDA for use in food. Cocoa itself contains flavanols, which are plant compounds that may have heart-health benefits, though processing can reduce their levels. Regulatory bodies like JECFA and EFSA have evaluated cocoa and its derivatives. Extensive research has not indicated significant health concerns associated with typical consumption levels of Dutch process cocoa.
