Essential Mustard Oil

Essential mustard oil is a pungent, volatile oil extracted from mustard seeds, typically from the *Brassica juncea* (brown mustard) or *Brassica nigra* (black mustard) species. It is produced through steam distillation or by pressing the seeds, often after they have been soaked in water. The characteristic sharp flavor and aroma come from compounds called isothiocyanates.

Essential mustard oil is primarily used as a flavoring agent, adding a pungent, spicy kick to foods. It is common in ethnic cuisines, particularly in Indian and Southeast Asian dishes, and is also found in some Western condiments like horseradish sauces and salad dressings.

Essential mustard oil is generally recognized as safe (GRAS) by the FDA for use as a flavoring agent. It is used in very small amounts in food, primarily for its flavor. JECFA has evaluated mustard oil and established an acceptable daily intake. Some studies suggest potential health benefits, but research is ongoing, and high concentrations can be irritating.
