Salad Mustard Solids

Salad mustard solids are the dried, powdered form of prepared mustard. Prepared mustard is made from mustard seeds, vinegar, water, salt, and spices. The solids are created by removing most of the water from prepared mustard, often through spray-drying.

Manufacturers add salad mustard solids to provide a concentrated mustard flavor and aroma to dry food products. They are commonly found in snack foods like chips, pretzels, and seasoned nuts. The solids offer a convenient way to incorporate the taste of mustard without adding significant moisture.

Salad mustard solids are generally recognized as safe (GRAS) by the FDA when used as a food ingredient. They are primarily composed of ingredients like mustard seed, vinegar, and salt, which are common food components. Regulatory bodies like JECFA and EFSA have evaluated the components of mustard and its derivatives. No significant health concerns are associated with the typical consumption of salad mustard solids in processed foods.
