Alkalized Cocoa

Alkalized cocoa, also known as Dutch-process cocoa, is cocoa powder treated with an alkaline solution. This process neutralizes the natural acidity of cocoa beans, making them less bitter and darker in color. It is derived from cocoa beans, which are the seeds of the cacao tree.

Manufacturers use alkalized cocoa to achieve a richer, darker color and a smoother, less bitter chocolate flavor in products. It is commonly found in baked goods like cakes and cookies, as well as in ice cream, chocolate bars, and beverages. The alkalization process also helps cocoa powder mix more easily with liquids.

Alkalized cocoa is generally recognized as safe (GRAS) by the FDA for use in food. The FDA has not established specific upper intake limits for cocoa powder. JECFA and EFSA have evaluated cocoa and cocoa products, and have not set a numeric acceptable daily intake. Some research suggests that the alkalization process may reduce the levels of certain beneficial flavonoids found in natural cocoa, though the impact on overall health at typical consumption levels is not considered significant.
