Black Carrot Concentrate

Black carrot concentrate is a natural food coloring made from the juice of black carrots (Daucus carota subsp. sativus). The carrots are grown for their deep purple pigment, which is extracted and concentrated to create a vibrant colorant.

Manufacturers use black carrot concentrate to provide a natural red, purple, or blue hue to foods. It is commonly found in candies, beverages, dairy products, and baked goods where a natural color source is desired.

Black carrot concentrate is generally recognized as safe (GRAS) by the FDA for use as a food coloring. It is primarily composed of anthocyanins, which are antioxidants also found in other purple fruits and vegetables. International bodies like EFSA have evaluated anthocyanins and their safety. At typical consumption levels, it is not associated with adverse health effects.
