Black Carrot Extract

Black carrot extract is a natural colorant derived from the root of the black carrot plant (Daucus carota). The vibrant purple pigment, known as anthocyanin, is extracted using water or ethanol and then purified.

Manufacturers use black carrot extract to provide a natural red, purple, or blue hue in a variety of foods and beverages. It is commonly found in fruit juices, yogurts, candies, jams, and baked goods.

Black carrot extract is generally recognized as safe (GRAS) by the FDA for use as a food colorant. Anthocyanins, the compounds responsible for the color, are also found in other fruits and vegetables and are studied for their antioxidant properties. Regulatory bodies like EFSA have evaluated anthocyanins, and JECFA has evaluated specific anthocyanin preparations. Evidence regarding health benefits at typical dietary intake levels is still under research.
