FD&C Lake Red # 40

FD&C Lake Red #40 is a synthetic color additive. It is the insoluble lake form of FD&C Red #40, made by precipitating the dye onto an inert base, typically aluminum hydroxide. This process makes it suitable for coloring products with low moisture content or where color bleeding is undesirable.

Manufacturers add FD&C Lake Red #40 to provide a red color to foods. It is often used in baked goods like cookies, biscuits, croissants, and pastries, as well as in ice cream and frozen yogurt, where its insoluble nature helps prevent color migration.

FD&C Lake Red #40 is an FDA-approved color additive for use in food. In April 2025, the FDA announced a plan to phase out petroleum-based synthetic dyes, which includes Red 40 and its lake forms. Some studies have suggested a link between synthetic food dyes, including Red 40, and hyperactivity in sensitive children, though evidence remains mixed. JECFA has evaluated Red 40 and set an acceptable daily intake. EFSA has also evaluated Red 40.
