Non-alkalized Cocoa Powder

Non-alkalized cocoa powder is made from roasted cocoa beans that have been ground into a powder. Unlike alkalized cocoa powder, it is not treated with an alkaline solution, which results in a more acidic and slightly bitter flavor. This process helps preserve the natural color and flavor of the cocoa.

Manufacturers add non-alkalized cocoa powder primarily for its rich chocolate flavor and dark color. It is a key ingredient in baked goods like cookies, cakes, and brownies, as well as in chocolate confections and beverages. Its natural acidity can also react with leavening agents like baking soda to help baked goods rise.

Non-alkalized cocoa powder is generally recognized as safe (GRAS) by the FDA for use in food. Cocoa contains flavanols, which are antioxidants. Some research suggests potential cardiovascular benefits from flavanol consumption, but more studies are needed. JECFA has evaluated cocoa and cocoa products, but did not set a numeric acceptable daily intake (ADI) for cocoa powder itself. Evidence regarding specific health impacts at typical dietary intake levels is still being researched.
