Organic Alfalfa Sprouts

Alfalfa sprouts are the young shoots of the alfalfa plant (Medicago sativa). They are grown from alfalfa seeds in a controlled environment, typically with water and light, until they reach a few inches in height. The sprouts are then harvested for consumption.

Alfalfa sprouts are primarily used as a fresh ingredient in foods where a crisp texture and mild flavor are desired. They are commonly added to sandwiches, salads, wraps, and as a garnish. Their use is more for adding texture and a fresh vegetable component than for a specific functional property like preservation or emulsification.

Alfalfa sprouts are generally recognized as safe (GRAS) by the FDA when used as a food ingredient. They are a source of vitamins and minerals. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) has evaluated alfalfa, and the European Food Safety Authority (EFSA) has also assessed its use. While generally considered safe, raw sprouts can sometimes be associated with foodborne illnesses if contaminated with bacteria like Salmonella or E. coli during growing or handling. Proper washing and cooking can reduce this risk.
