Purple Sweet Potato Juice Extract

Purple sweet potato juice extract is a natural coloring derived from the purple flesh of sweet potatoes. The vibrant color comes from anthocyanins, a type of flavonoid pigment. It is typically produced by extracting the color from the sweet potato using water or ethanol.

Manufacturers use this extract as a natural food coloring to provide purple and red hues. It is often found in beverages, confectionery, dairy products, and baked goods where a natural, plant-based colorant is desired.

Purple sweet potato extract is generally recognized as safe (GRAS) by the FDA for use as a food coloring. Anthocyanins, the compounds responsible for the color, are also found in many fruits and vegetables and are studied for their antioxidant properties. Regulatory bodies like EFSA have evaluated anthocyanins, generally considering them safe. Evidence on specific health benefits is ongoing and not conclusive.
