Red 3 And 40 Lake

Red 3 Lake and Red 40 Lake are synthetic color additives used to impart a red hue to foods. They are made by precipitating the water-soluble dyes (Erythrosine for Red 3, Allura Red AC for Red 40) onto an insoluble base, often aluminum hydroxide, to create a pigment. This lake form helps the color distribute evenly in fat-based products and provides better stability than the water-soluble dye form.

These color additives are used to enhance the visual appeal of various food products. They are commonly found in candies, baked goods, beverages, and processed foods to achieve a vibrant red color. The lake form is particularly useful in products with low moisture or high fat content.

Red 3 is an FDA-approved color additive, though its use in food was revoked by the FDA in January 2025, with manufacturers having until January 2027 to comply. This revocation was due to findings of cancer in male rats, as required by the Delaney Clause, though the FDA stated this is not relevant to human risk. California will ban Red 3 in food from 2027. Red 40 Lake is also an FDA-approved color additive. In April 2025, the FDA announced a plan to phase out petroleum-based synthetic dyes, including Red 40. Both Red 3 and Red 40 have been evaluated by JECFA, which has set an acceptable daily intake. Some studies have suggested a link between synthetic food colors, including Red 40, and hyperactivity in some children, but the evidence is mixed.
