Organic Dutch Cocoa Powder

Organic Dutch cocoa powder is made from cocoa beans that have been treated with an alkaline solution. This process, called 'Dutching,' reduces the bitterness and mellows the flavor of the cocoa, while also darkening its color. The beans are then roasted, ground into a paste, and dried into a powder.

Manufacturers use Dutch cocoa powder primarily for its rich, mellow chocolate flavor and dark color. It's a common ingredient in baked goods like cakes, cookies, and brownies, as well as in ice cream, hot chocolate, and other desserts. The alkalization process also helps it dissolve more easily in liquids.

Organic Dutch cocoa powder is generally recognized as safe (GRAS) by the FDA for use in food. Cocoa itself contains flavanols, which are plant compounds that may have antioxidant properties. Research into the health effects of cocoa flavanols is ongoing, with some studies suggesting potential benefits for heart health, while others show mixed results. JECFA and EFSA have evaluated cocoa and cocoa products. Typical consumption levels in food are not associated with adverse health effects.
