Tart Cherry Juice Concentrate

Tart cherry juice concentrate is made by removing most of the water from tart cherry juice. This process intensifies the flavor and color of the cherries. It is derived from the fruit of the *Prunus cerasus* tree.

Manufacturers use tart cherry juice concentrate to add a distinct tart-sweet flavor and a deep red color to foods and beverages. It is commonly found in fruit juices, nectars, other drinks, and sometimes in baked goods or sauces.

Tart cherry juice concentrate is generally recognized as safe (GRAS) by the FDA for use in food. It is a source of anthocyanins, which are antioxidants. Some research suggests potential benefits for sleep and exercise recovery, but more studies are needed. JECFA has evaluated tart cherry juice concentrate.
