To Retard Spoilage Sodium Benzoate

Sodium benzoate is a salt of benzoic acid, a chemical that occurs naturally in some fruits and spices. It is typically produced industrially by reacting toluene with chlorine and then neutralizing the resulting benzoyl chloride with sodium hydroxide. It appears as a white crystalline powder.

Sodium benzoate is used as a preservative to prevent the growth of mold, yeast, and bacteria in foods and beverages. It is most effective in acidic conditions. It is commonly found in acidic foods like soft drinks, fruit juices, pickles, jams, and salad dressings.

Sodium benzoate is generally recognized as safe (GRAS) by the FDA when used as a food preservative. It is also approved by the FDA as a direct food additive. JECFA and EFSA have evaluated sodium benzoate and established acceptable daily intakes. Some studies have raised concerns about its potential to form benzene in the presence of ascorbic acid (vitamin C) in beverages, though levels are generally considered low and within regulatory limits. Further research is ongoing.
