Artificial Colour

Artificial colors are synthetic substances used to add or restore color to food. They are typically made from petroleum or coal tar. These colorings are manufactured through chemical processes to create specific shades and improve their stability in food products.

Manufacturers use artificial colors to make food more visually appealing, to compensate for color loss during processing, or to ensure color consistency. They are found in a wide variety of processed foods, including candies, beverages, baked goods, snacks, and some dairy products.

In the U.S., artificial colors are regulated by the FDA and must be approved for use in food. Some studies have suggested a possible link between certain artificial colors and hyperactivity in some children, though the evidence is mixed and regulatory bodies have not established a causal link at typical intake levels. JECFA and EFSA have evaluated many artificial colors, and most are permitted for use with specified limits or conditions.
