Biscuit Mix: Enriched Wheat Flour

Enriched wheat flour is a type of flour made from wheat grains that have been milled to remove the bran and germ, leaving only the endosperm. During the enrichment process, certain B vitamins (thiamin, riboflavin, niacin, folic acid) and iron are added back to the flour to restore nutrients lost during milling.

Manufacturers use enriched wheat flour as a primary ingredient to provide structure and texture in a wide variety of baked goods and processed foods. It is commonly found in breads, pastas, cereals, crackers, and many prepared meals.

Enriched wheat flour is a common food ingredient and not regulated as an additive by the FDA. The enrichment process helps address nutrient deficiencies by adding back essential vitamins and iron. While it provides carbohydrates for energy, it lacks the fiber found in whole wheat flour. For individuals with celiac disease or gluten sensitivity, consuming wheat flour can cause adverse reactions. JECFA and EFSA do not typically evaluate basic food ingredients like enriched wheat flour.
