Organic Dessicated Coconut

Desiccated coconut is generally recognized as safe (GRAS) by the FDA for use in food. It is a source of dietary fiber and healthy fats. While it contains saturated fat, it is primarily medium-chain triglycerides (MCTs), which are metabolized differently than other saturated fats. JECFA has evaluated coconut oil, but specific evaluations for desiccated coconut are not readily available.
