What it is

Reduced acid pineapple juice concentrate is made by extracting juice from pineapples, removing most of the water to create a concentrated form, and then reducing its natural acidity. This process results in a product with a milder, less tart pineapple flavor.

Why it's used

Manufacturers add this ingredient to provide a natural pineapple flavor and sweetness without excessive tartness. It is often used in salad dressings, sauces, beverages, and yogurt to balance flavors and enhance the overall taste profile.

Health notes

Pineapple juice concentrate, including its reduced acid form, is generally recognized as safe (GRAS) by the FDA. Like all fruit juice concentrates, it contains natural sugars, and the 2025-2030 Dietary Guidelines for Americans recommend limiting intake of added sugars. As a natural food ingredient, it is not typically evaluated by JECFA or EFSA as a food additive.
