Sodium Benzoate And Sulfur Dioxide

Sodium benzoate is a salt of benzoic acid, a chemical found naturally in some fruits. It is typically manufactured by reacting toluene with chlorine and then neutralizing the resulting benzoyl chloride with sodium hydroxide. Sulfur dioxide is a gas produced by burning sulfur. It is also found naturally in small amounts in some foods and is produced during fermentation.

Sodium benzoate and sulfur dioxide are often used together as preservatives in acidic foods like fruit juices, pickles, and jams. Sodium benzoate inhibits the growth of mold, yeast, and some bacteria. Sulfur dioxide prevents oxidation and preserves color.

Sodium benzoate is Generally Recognized As Safe (GRAS) by the FDA for use as a preservative. Sulfur dioxide is also permitted as a food additive by the FDA. Both have been evaluated by JECFA and EFSA. Some studies have explored potential links between sodium benzoate and hyperactivity in children, but evidence is mixed and regulatory bodies have not changed their safety assessments based on this research. Sulfur dioxide can trigger asthma symptoms in sensitive individuals.
