Sodium Propionate-a Preservative

Sodium propionate is a salt of propionic acid, a naturally occurring fatty acid. It is produced commercially by reacting propionic acid with sodium hydroxide or sodium carbonate. It appears as a white crystalline powder.

Sodium propionate is used as a preservative to inhibit the growth of mold and bacteria in baked goods. It helps extend the shelf life of products like bread, cakes, and pastries. It is commonly found in packaged baked goods, especially snack, energy, and granola bars.

In the United States, sodium propionate is generally recognized as safe (GRAS) by the FDA for use as a food preservative. It is metabolized by the body like other fatty acids. International bodies like JECFA have evaluated sodium propionate, and EFSA has also assessed its safety. Evidence does not suggest adverse health effects at typical consumption levels.
