Antioxidant - Sulfites

Sulfites are a group of chemical compounds containing sulfur and oxygen. They occur naturally in small amounts in some foods and are also produced by the body. In food production, sulfites are often added as preservatives.

Sulfites are used as antioxidants and antimicrobial agents to prevent spoilage and maintain the color and flavor of foods. They are commonly found in dried fruits, wine, processed meats, and some baked goods.

In the U.S., sulfites are generally recognized as safe (GRAS) by the FDA when used according to good manufacturing practices, but they must be declared on the label if present above 10 parts per million. Some individuals, particularly those with asthma, may experience sensitivity reactions to sulfites. JECFA and EFSA have evaluated sulfites and established acceptable daily intakes. Evidence on the link between sulfites and asthma exacerbation is mixed, with some studies showing a correlation and others not.
