What it is

Citric acid anhydrous is a weak organic acid. It occurs naturally in citrus fruits like lemons and limes. It is commercially produced by fermenting a sugar source, such as corn or beet sugar, with a specific strain of mold (Aspergillus niger). The anhydrous form means it does not contain water molecules.

Why it's used

Manufacturers use citric acid anhydrous as an acidity regulator, flavoring agent, and preservative. It adds a sour or tart taste to foods and beverages. It is commonly found in candies, jams, jellies, carbonated drinks, and frozen desserts.

Health notes

Citric acid is generally recognized as safe (GRAS) by the FDA for use in food. It is a common component of human metabolism. International bodies like JECFA and EFSA have evaluated citric acid and found it safe for consumption. At typical dietary levels, it is not associated with adverse health effects.

Allergen info

Citric acid is not derived from any of the FDA's major allergens. It does not contain gluten.
