Mechanically separated chicken meat is a paste-like poultry product made from chicken carcasses after the valuable cuts of meat have been removed. It is produced by forcing the bones, skin, and residual meat through a sieve or strainer under high pressure. This process separates the soft tissues from the bone fragments, creating a smooth, homogenous mixture.

This ingredient is often used as a protein source and binder in processed meat products. Its texture and mild flavor make it suitable for use in items like canned soups, frozen dinners, and some processed poultry products. Manufacturers use it to add bulk and improve the texture of certain food items.

Mechanically separated chicken is permitted for use in the U.S. food supply. The FDA considers it safe when produced under sanitary conditions. International bodies like JECFA have evaluated similar meat products. Current research does not indicate adverse health effects from consuming mechanically separated chicken at typical intake levels.
