Freshness Preserved By Sodium Metabisulfite

Sodium metabisulfite is a white or slightly yellowish crystalline powder. It is a salt of sulfurous acid, made by reacting sulfur dioxide with sodium carbonate or sodium hydroxide. It is commonly used as a preservative and antioxidant.

Manufacturers add sodium metabisulfite to foods to prevent spoilage by inhibiting the growth of bacteria and molds, and to preserve color and flavor. It is often found in dried fruits, processed potatoes, and wine.

Sodium metabisulfite is permitted for use in food by the FDA. It is generally recognized as safe (GRAS) for its intended use. People with asthma or sulfite sensitivity may experience allergic reactions, such as wheezing or hives. JECFA has evaluated sodium metabisulfite and established an acceptable daily intake. EFSA has also evaluated sulfites and concluded they are safe for the general population at typical intake levels, but noted concerns for sensitive individuals.
