pH control agents are substances added to food to change or maintain the acidity or alkalinity. They can be acids, bases, or salts, and are often derived from natural sources or produced through chemical processes. Common examples include citric acid, acetic acid, and sodium bicarbonate.

Manufacturers use pH control agents to preserve food, enhance flavor, and control texture. They help prevent spoilage by inhibiting microbial growth, contribute to tartness or tanginess, and can affect how ingredients interact. These agents are found in a wide variety of foods, including baked goods, dairy products, processed meats, and pickled vegetables.

Many common pH control agents, such as citric acid and acetic acid, are Generally Recognized As Safe (GRAS) by the FDA. These substances are naturally present in many foods and are essential for human metabolism. Regulatory bodies like JECFA and EFSA have evaluated many of these compounds and found them safe for consumption at typical levels. While generally safe, excessive intake of highly acidic or alkaline substances could potentially irritate the digestive tract.
