Sodium Benzoate And Sodium Bisulfite

Sodium benzoate is a salt of benzoic acid, a chemical that occurs naturally in some fruits. It is typically made by reacting toluene with chlorine and then oxidizing the resulting benzyl chloride. Sodium bisulfite is a salt of sulfurous acid, a chemical that can be produced by burning sulfur.

These compounds work together as preservatives to prevent spoilage from bacteria, yeasts, and molds. They are often found in acidic foods like pickles, olives, relishes, sauerkraut, and some dips and salsas.

Sodium benzoate and sodium bisulfite are approved for use in food by the FDA. The FDA has designated sodium benzoate as Generally Recognized As Safe (GRAS) when used according to good manufacturing practices. JECFA and EFSA have evaluated both substances. Some studies have explored potential links between sodium benzoate and hyperactivity in children, though evidence is mixed and regulatory bodies have not established a causal link at typical intake levels. Sodium bisulfite can cause allergic-type reactions in sensitive individuals.
