Water Gelatin

Gelatin is a protein derived from collagen, which is found in the skin, bones, and connective tissues of animals. It is typically made by boiling these animal parts, then filtering, purifying, and drying the resulting liquid. When dissolved in hot water and then cooled, gelatin forms a gel.

Gelatin is used as a gelling agent, stabilizer, and thickener in foods. It is commonly found in desserts like gelatin molds, puddings, and marshmallows, as well as in gummy candies, yogurts, and some processed meats. Its ability to create a gel structure is its primary function in these products.

In the U.S., gelatin is generally recognized as safe (GRAS) by the FDA. It is a protein source and is considered safe when consumed in amounts typically found in food. International bodies like JECFA have evaluated gelatin. There are no widespread health controversies associated with its consumption at normal levels.
