Waxy Maize Starch-modified

Waxy maize starch-modified is a type of corn starch that has been chemically altered to change its properties. It is derived from waxy corn, a variety of corn whose kernels contain almost exclusively amylopectin starch. The modification process alters the starch's viscosity, stability, and texture, making it more useful in food production.

Manufacturers use modified waxy maize starch as a thickener, stabilizer, and texturizer in a wide range of food products. It provides a smooth, creamy texture and helps prevent ingredients from separating. It is commonly found in dairy products, sauces, soups, baked goods, and beverages.

Modified starches like waxy maize starch are generally recognized as safe (GRAS) by the FDA for use in food. They are a source of carbohydrates and are digested like other starches. International bodies like JECFA and EFSA have evaluated various modified starches, generally finding them safe for consumption when used as intended. There are no widespread health controversies associated with its typical use in food.
