Antioxidant: Sodium Metabisulfite

Sodium metabisulfite is a white or slightly yellowish crystalline powder. It is a salt of sulfurous acid, made by reacting sulfur dioxide with sodium carbonate or sodium hydroxide. It is often used as a preservative and antioxidant.

Sodium metabisulfite is used to prevent spoilage and maintain the color and flavor of foods. It acts as an antioxidant, preventing browning in fruits and vegetables, and as a preservative, inhibiting the growth of bacteria and other microorganisms. It is commonly found in dried fruits, wine, processed potatoes, and some seafood.

Sodium metabisulfite is generally recognized as safe (GRAS) by the FDA for use as an antioxidant and preservative. It can cause allergic reactions in some individuals, particularly those with asthma. The Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the European Food Safety Authority (EFSA) have evaluated sodium metabisulfite. While generally considered safe at typical consumption levels, some studies suggest potential adverse effects in sensitive individuals.
