Asafetida

Asafetida is a pungent gum resin extracted from the roots and rhizomes of several species of Ferula, a plant in the parsley family. It is dried and ground into a powder. The strong odor of raw asafetida dissipates when cooked, leaving a savory, umami flavor reminiscent of onions and garlic.

Asafetida is used as a flavoring agent, particularly in Indian cuisine, where it often substitutes for onion and garlic. It is also used to add a savory depth to vegetarian dishes. It is found in spice blends, sauces, snacks, and frozen appetizers.

Asafetida is generally recognized as safe (GRAS) by the FDA for use as a food flavoring. JECFA has evaluated asafetida and did not set a numeric limit (ADI not specified). Some traditional uses suggest digestive benefits, but robust scientific evidence for these claims in humans at typical dietary intake levels is limited. Research is ongoing into its potential antioxidant and antimicrobial properties.
