Chocolate Truffles

Chocolate truffles are a type of confectionery, typically made from a ganache center (a mixture of chocolate and cream) that is then shaped and often coated with cocoa powder, nuts, or chocolate. They are named for their resemblance to the edible fungus truffles.

When listed as an ingredient, chocolate truffles are added to foods like ice cream, yogurt, or baked goods to provide flavor, texture, and visual appeal. They contribute a rich chocolate taste and a creamy or chewy element to the final product.

Chocolate truffles are a food item, not a food additive, and therefore are not subject to FDA approval or GRAS status in the same way as individual chemical ingredients. Their nutritional profile depends on the specific recipe, but they are generally high in calories, sugar, and saturated fat. The 2025-2030 Dietary Guidelines for Americans recommend no amount of added sugars and advise limiting saturated fat to less than 10% of daily calories. Consumption of foods high in sugar and saturated fat should be part of a balanced diet. JECFA and EFSA evaluate individual food additives and contaminants, not composite food items like chocolate truffles.
