Red 40 Lake is a color additive that provides a red hue. It is a "lake" pigment, meaning the water-soluble Red 40 dye (also known as Allura Red AC) is combined with an insoluble material, typically aluminum hydroxide, to make it suitable for coloring fats, oils, and dry products.

It is used to add a red color to a wide variety of foods, especially those with low moisture or high fat content. You can find it in snacks like popcorn, candies, cookies, and various coatings.

Red 40 Lake is an FDA-approved color additive for use in food. In April 2025, the FDA announced a plan to phase out petroleum-based synthetic dyes, including Red 40, which is the basis for Red 40 Lake. Some studies have suggested a link between synthetic food dyes, including Red 40, and hyperactivity in some children; however, the evidence is mixed. Regulatory bodies generally conclude that for most people, these dyes do not pose a health risk at typical consumption levels. The FDA states that current scientific evidence does not show a causal link between these dyes and hyperactivity in the general population, but acknowledges that some children may be sensitive. JECFA has evaluated Red 40 and set an acceptable daily intake. EFSA has also evaluated Red 40 and established an acceptable daily intake.
