Sodium nitrite is a white to slightly yellowish crystalline powder. It is an inorganic salt that is synthetically produced. It is highly soluble in water.

Sodium nitrite is used as a preservative in cured meats like bacon, ham, and hot dogs. It helps prevent the growth of harmful bacteria, particularly Clostridium botulinum, which causes botulism. It also contributes to the pink color and characteristic cured flavor of these products.

In the U.S., sodium nitrite is permitted as a food additive for curing meats. The FDA monitors its use. Concerns have been raised about the potential formation of nitrosamines, which are compounds that can form when nitrites react with amines at high temperatures. Some studies suggest a link between high consumption of processed meats containing nitrites and certain health issues, while other reviews have found insufficient evidence to establish a causal link at typical intake levels. JECFA and EFSA have evaluated sodium nitrite.
