Ammonium Bicarbonate & Sodium Bicarbonate

Ammonium bicarbonate and sodium bicarbonate are both chemical compounds used in food. Sodium bicarbonate is commonly known as baking soda. Ammonium bicarbonate is a salt that breaks down into ammonia, carbon dioxide, and water when heated.

These ingredients are primarily used as leavening agents in baked goods. When heated, they produce carbon dioxide gas, which causes doughs and batters to rise, creating a lighter texture. They are frequently found in cookies, crackers, and biscuits.

Both ammonium bicarbonate and sodium bicarbonate are generally recognized as safe (GRAS) by the FDA for use in food. Sodium bicarbonate is a common antacid and is used to manage indigestion. When consumed in amounts typically found in food, they are not associated with adverse health effects. International bodies like JECFA have evaluated these substances.
