Food Gums

Food gums are a diverse group of carbohydrates that dissolve in water to form a gel or thicken liquids. They are typically derived from natural sources like plant seeds (e.g., guar gum from guar beans), seaweeds (e.g., carrageenan from red algae), or through bacterial fermentation (e.g., xanthan gum). These gums are processed to extract and purify the desired carbohydrate.

Food gums are primarily used as thickeners, stabilizers, and emulsifiers in processed foods. They help improve texture, prevent ingredients from separating, and create a smoother mouthfeel. You'll find them in products like sauces, dressings, dairy products, baked goods, and beverages.

Many food gums are Generally Recognized As Safe (GRAS) by the FDA for use in food. International bodies like JECFA and EFSA have also evaluated various food gums. At typical consumption levels, they are not associated with adverse health effects. Some gums, like guar gum and psyllium, can act as soluble fibers and may help with digestive regularity. Evidence on their impact on gut microbiota is an area of ongoing research.
