Sodium Benzoate Preservative

Sodium benzoate is a salt of benzoic acid. It is produced when benzoic acid reacts with sodium hydroxide. Benzoic acid is found naturally in many fruits, like cranberries and apples, but is often synthesized for commercial use.

Sodium benzoate is used as a preservative to prevent the growth of mold, yeast, and bacteria in foods. It is most effective in acidic foods, such as pickles, olives, and carbonated drinks. It is commonly found in processed foods like cakes, cupcakes, cookies, and relishes.

In the U.S., sodium benzoate is Generally Recognized As Safe (GRAS) by the FDA when used as a food preservative. It has been evaluated by JECFA and EFSA. Some studies have raised concerns about its potential to form benzene, a carcinogen, when combined with ascorbic acid (Vitamin C) in beverages, particularly when exposed to heat or light. However, regulatory bodies consider the levels typically found in foods to be safe.
