Coconut And Palm Kernel Oils

Coconut oil is a vegetable fat extracted from the meat of mature coconuts. Palm kernel oil is also a vegetable fat, obtained from the kernel (seed) of the oil palm fruit. Both are highly saturated fats that are solid at room temperature.

These oils are used in food manufacturing for their texture, stability, and richness. They contribute to a creamy mouthfeel and are often found in products like whipped toppings, baked goods, and confectionery coatings, where they help provide structure and prevent melting.

Coconut oil and palm kernel oil are generally recognized as safe (GRAS) for use in food. Both are high in saturated fat; the 2025-2030 Dietary Guidelines for Americans recommend limiting saturated fat intake to less than 10% of daily calories. JECFA and EFSA have evaluated dietary fats as part of overall nutrition, but these specific oils are not typically assessed as food additives with individual ADIs. Their impact on health is primarily related to their saturated fat content within the context of a total diet.
