Preserves Freshness is a brand name for a blend of ingredients, primarily sorbic acid and potassium sorbate. Sorbic acid is a naturally occurring organic compound, while potassium sorbate is its potassium salt. They are synthesized industrially for use as food additives.

These ingredients are added to foods to inhibit the growth of mold, yeast, and bacteria, thereby extending shelf life and preserving freshness. They are commonly found in baked goods like cookies, cakes, and cupcakes, as well as in liquid water enhancers and other processed foods.

Potassium sorbate and sorbic acid are approved food additives in the U.S. and are generally recognized as safe (GRAS) by the FDA when used according to regulations. International bodies like JECFA and EFSA have evaluated these substances. Studies on typical consumption levels have not shown significant adverse health effects. Some individuals may experience mild allergic reactions, such as skin rashes, but this is rare.
