Margarine is a semi-solid food product designed to resemble butter, typically made from a blend of vegetable oils, water, and sometimes milk solids. It is an emulsion, meaning tiny droplets of water are dispersed throughout the fat, often with the help of emulsifiers. The oils are processed to achieve the desired texture and stability.

Manufacturers use margarine as a fat source in many processed foods, including baked goods like cakes, cookies, and pastries, to provide moisture, texture, and flavor. It is also a common spread for toast and a cooking fat for frying. Its versatility and often lower cost compared to butter make it popular in commercial food production.

Margarine is regulated as a food product, and its ingredients are subject to FDA regulations. Historically, some margarines contained partially hydrogenated oils (PHOs), a source of artificial trans fats, but PHOs are no longer Generally Recognized As Safe (GRAS) by the FDA since 2018, effectively removing most artificial trans fats from the food supply. The Dietary Guidelines for Americans (2025-2030) recommend keeping saturated fat intake under 10% of daily calories, and the saturated fat content of margarine varies depending on the oils used. JECFA and EFSA evaluate specific fats and food additives that may be used in margarine, but not margarine as a whole product.
