Vegetable and cooking oils are fats extracted from plants, commonly used for frying, baking, sautéing, and in salad dressings. This category includes a wide variety, such as canola, corn, olive, sunflower, and sesame oils. When choosing oils, the Nutrition Facts label can provide helpful information. Oils are calorie-dense, so portion sizes matter. Most pure vegetable oils contain very little to no sodium or added sugars. A key nutrient to observe is saturated fat. The 2025-2030 Dietary Guidelines for Americans recommend limiting saturated fat intake to less than 10% of daily calories. Many oils are naturally low in saturated fat and contain beneficial unsaturated fats. The ingredient list for pure oils should typically feature only one item: the oil itself.
