Vegetable and cooking oils are fats extracted from plants, commonly used for frying, baking, sautéing, and in salad dressings. Oils are calorie-dense, so portion sizes matter. Most pure vegetable oils contain very little to no sodium or added sugars. A key nutrient to observe is saturated fat.
