Vegetable and cooking oils are fats extracted from plants, commonly used for frying, baking, sautéing, and in salad dressings. This category includes a wide variety, such as canola, corn, olive, sunflower, and sesame oils. When choosing oils, the Nutrition Facts label can provide helpful information. Oils are calorie-dense, so portion sizes matter. Most pure vegetable oils contain very little to no sodium or added sugars. A key nutrient to observe is saturated fat. Many oils are naturally low in saturated fat and contain beneficial unsaturated fats. The ingredient list for pure oils should typically feature only one item: the oil itself.
